I made turmeric rice adapted from a recipe I found on the web. It didn’t work out quite how I expected but The Irit said it was amazing so here’s the recipe. It’s still a bit experimental, so I’m putting it here for the record, so I can remember what I did. I’ll update it when I do it again.
In a pan put a tin of coconut milk, finely chopped raw turmeric, chilli flakes, some ground cinammon and salt. Bring to the boil and leave to steep for a few minutes. Add 1 cup brown basmati rice. Bring to the boil and simmer until most of the liquid is absorbed, maybe 15 minutes. Somewhere in there it felt like the rice wasn’t going to completely cook, so I added a bit of water. Leave to stand for 10 minutes or so. At this point it still didn’t feel quite cooked so I put it in a bowl, covered with a plate and microwaved it for 5 minutes.
I served it with fava bean dahl. Serves 2.
